THE CLASSIFICATION OF COCOA

Cocoa beans are often classified by country, e.g., “Ghana” or “Java.”

I personally believe that it can only be done if you produce in the dark, that is, with the industrial concept, while in my production I indicate the variety, plantation, region and country, sometimes the harvest date and the sequence of plants that provided those broad beans.

It may seem excessive, but when you know this data you do nothing more than what is required of a quality wine that has the best possible clarity, and we with production control are able to replicate the detail.

These are aspects that may be missed, but they are important to us.
