conduit \u00e0 une \u00e9volution constante.<\/p>\n<p>La <em>tradition pi\u00e9montaise<\/em> du <em>travail<\/em> du chocolat et la <em>cr\u00e9ativit\u00e9<\/em> que l&rsquo;on peut exprimer en travaillant le chocolat m&rsquo;ont incit\u00e9 \u00e0 r\u00e9aliser ce grand r\u00eave : <strong>produire du chocolat<\/strong>.<\/p>\n<p>De mon installation \u00e0 <em>Vicoforte<\/em> \u00e0 la mise en place d&rsquo;un atelier moderne et sur\u00e9quip\u00e9 pour la production de chocolat, il n&rsquo;y a qu&rsquo;un pas.<\/p>\n<p>Il existe trois types de chocolatiers : <em>les fondeurs, les m\u00e9langeurs et les torr\u00e9facteurs<\/em>.<\/p>\n<p>En ce qui me concerne, j&rsquo;ai franchi les deux premi\u00e8res \u00e9tapes avec une satisfaction moyenne, mais mon objectif a toujours \u00e9t\u00e9 de pouvoir choisir directement et de donner ma propre empreinte au chocolat que je travaillais.<\/p>\n<p>La seule solution \u00e9tait donc de passer au troisi\u00e8me type.<\/p>\n<p><strong><em>Et je suis all\u00e9 aux sources de cacao.<\/em><\/strong><\/p>\n\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-d4595c6 que cela a \u00e9t\u00e9 facile serait un mensonge.<\/p>\n<p>En tant que chocolatier de f\u00e8ves exp\u00e9riment\u00e9, on ne l&rsquo;apprend pas dans les livres, conna\u00eetre les march\u00e9s est encore plus difficile et l&rsquo;importation est vraiment un exploit pour les audacieux.<\/p>\n<p>Depuis quelques ann\u00e9es, je connais des personnalit\u00e9s de la production de cacao, et pour cette premi\u00e8re ann\u00e9e de torr\u00e9faction, j&rsquo;ai choisi de me rendre sur l&rsquo;\u00eele de <em>Sao Tom\u00e9<\/em>, o\u00f9 l&rsquo;on trouve des vari\u00e9t\u00e9s rares et un grand savoir-faire artisanal dans la transformation des f\u00e8ves.<\/p>\n<p>J&rsquo;ai pens\u00e9 mettre mon exp\u00e9rience de la recherche des meilleures vari\u00e9t\u00e9s \u00e0 la disposition de tous Saotomense<\/em><br \/>\n<\/strong>Apr\u00e8s quelques recherches sur place, j&rsquo;ai constat\u00e9 qu&rsquo;il existe une vari\u00e9t\u00e9 tr\u00e8s int\u00e9ressante de <em>Forassero<\/em> sur l&rsquo;\u00eele.<\/p>\n<p>Les fruits sont un peu plus trapus et plus courts que les autres vari\u00e9t\u00e9s, la coloration est jaune-orange et les graines sont l\u00e9g\u00e8rement plus petites.<\/p>\n<p>Les recherches chimiques ont donn\u00e9 des r\u00e9sultats surprenants : une pr\u00e9sence importante d&rsquo;alcalo\u00efdes, un bon pourcentage de mati\u00e8res grasses, mais surtout une saveur intense et particuli\u00e8rement fruit\u00e9e.<\/p>\n<p>Les sensations vont de l&rsquo;ananas \u00e0 la p\u00eache jaune, avec des notes de fromage dues \u00e0 la fermentation lactique qui lui donne son go\u00fbt caract\u00e9ristique.<\/p>\n<p>Le fait que les grains soient plus petits que les autres facilite le s\u00e9chage et l&rsquo;\u00e9change de chaleur, ce qui se traduit par une torr\u00e9faction plus uniforme.<\/p>\n\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-32b7fb4 elementor-widget
