Rather than just looking for novelties with an exclusive “look” appeal, we try to enhance traditional products from our regions by applying time-honoured methods that are, at times, old-fashioned and not cost-effective, but they make a difference to the product, as in the case of Cuneesi al Rhum and paste di meliga.
When Silvio starts making meringues for the Cuneesi in the morning, time seems to have stood still.
The meringues are shaped by hand and cooked in the oven before being hollowed out with a finger before being filled with a soft chocolate and rum-flavoured pastry cream.
They are then dipped in rum and coated with a thin layer of chocolate before being carefully and delicately wrapped by the shop assistants to show off these renowned local specialties.
